Plum & Cardamom Macarons

These Plum & Cardamom Macarons are a seasonal variation of my roasted macaron shells. The shells are made with roasted almond flour and skim milk powder, giving them a beautifully nutty, lightly caramelized flavor.

They are filled with a creamy plum and cardamom ganache and a small center of intense plum compote. The natural acidity of the plums balances the sweetness of the white chocolate, while cardamom takes center stage. A touch of ginger, cinnamon and lemon zest adds warmth and depth without overpowering the cardamom.

Plum Compote

● 150 g pitted plums

● 20 g sugar

● 3 g lemon juice

● 1 g NH pectin

● zest of ½ organic lemon

● ½–1 tsp ground cardamom

● ¼ tsp ground ginger

● 1 small pinch of cinnamon

Plum & Cardamom Ganache

● 120 g white chocolate

● 70 g plum compote

● additional cardamom, to taste

Method

1. Make the plum compote

Wash, pit and cut the plums into small pieces.

Place them in a small saucepan with the sugar and lemon juice and bring to a simmer over medium heat. Lightly crush the plums as they cook, keeping some texture.

Mix the NH pectin with a small amount of the sugar and whisk it into the hot plum mixture.

Bring the mixture to a brief boil, then continue cooking until the compote has reduced and become thick.

Stir in the lemon zest, cardamom, ginger and cinnamon.

Allow the compote to cool completely.

The finished compote should have the consistency of a thick fruit gel rather than a loose compote. It should be easy to pipe without spreading or running.

2. Make the plum and cardamom ganache

Gently melt the white chocolate.

Add approximately 70 g of the cooled plum compote to the melted white chocolate and mix thoroughly until completely smooth and homogeneous.

Taste and add a little more cardamom if desired. Since cardamom is the main flavor of this filling, it should be clearly noticeable.

Allow the ganache to cool until it reaches a creamy, pipeable consistency.

3. Assemble the macarons

Transfer the cooled plum and cardamom ganache to a piping bag.

Pipe it onto the macaron shell. Pipe a small amount of the remaining plum compote into the center of each macaron.

Place a second shell on top and gently press together until the filling reaches the edges.

Store the finished macarons in an airtight container in the refrigerator and allow them to mature for at least 24 hours.

This allows the filling to soften the shells slightly and gives the macarons their characteristic delicate, chewy texture.

Let the macarons come to room temperature for approximately 15–30 minutes before serving.

Storage

The filled macarons can be stored in an airtight container in the refrigerator for approximately 4–5 days.

They can also be frozen very well. Store them airtight and allow them to thaw slowly in the refrigerator.

Zwetschgen – Kardamom – Macarons

Diese Zwetschgen-Kardamom Macarons sind eine herbstliche Variante meiner gerösteten Macaron-Schalen. Die Schalen werden mit geröstetem Mandelmehl und Magermilchpulver hergestellt und bekommen dadurch ein wunderbar nussiges, leicht karamelliges Aroma.

Gefüllt werden sie mit einer cremigen Zwetschgen-Kardamom-Ganache und einem kleinen Kern aus intensivem Zwetschgenkompott. Die fruchtige Säure der Zwetschgen gleicht die Süße der weißen Schokolade aus, während Kardamom klar im Mittelpunkt steht. Ein wenig Ingwer, Zimt und Zitronenabrieb runden die Füllung ab, ohne den Kardamom zu überdecken.

Für die Macaron-Schalen verwende ich mein Rezept für die gerösteten Macaron-Schalen mit Magermilchpulver. Das Rezept ergibt je nach Größe etwa 20–23 gefüllte Macarons.

Zutaten

Macaron-Schalen

Das Rezept ergibt etwa 20–23 gefüllte Macarons, abhängig von der Größe der Schalen.

Zwetschgenkompott

● 150 g entsteinte Zwetschgen

● 20 g Zucker

● 3 g Zitronensaft

● 1 g Pektin NH

● Abrieb von ½ Bio-Zitrone

● ½–1 TL gemahlener Kardamom

● ¼ TL gemahlener Ingwer

● 1 kleine Prise Zimt

Zwetschgen-Kardamom-Ganache

● 120 g weiße Schokolade

● 70 g Zwetschgenkompott

● optional etwas zusätzlicher Kardamom nach Geschmack

Zubereitung

1. Zwetschgenkompott

Die Zwetschgen waschen, entsteinen und in kleine Stücke schneiden.

Zusammen mit dem Zucker und Zitronensaft in einen kleinen Topf geben und bei mittlerer Hitze aufkochen lassen. Die Zwetschgen dabei leicht zerdrücken, sodass eine dicke Fruchtmasse entsteht, aber noch etwas Struktur erhalten bleibt.

Das Pektin NH mit einem kleinen Teil des Zuckers vermischen und unter ständigem Rühren in die heiße Zwetschgenmasse geben.

Die Masse einmal kräftig aufkochen lassen und anschließend kurz weiter einkochen, bis das Kompott deutlich reduziert und dickflüssig ist.

Den Zitronenabrieb, Kardamom, Ingwer und die kleine Prise Zimt einrühren.

Das Kompott vollständig abkühlen lassen.

Die Konsistenz sollte eher an ein dickes Fruchtgel als an ein flüssiges Kompott erinnern. Es sollte sich problemlos auf einen Macaron spritzen lassen, ohne davonzulaufen.

2. Zwetschgen-Kardamom-Ganache

Die weiße Schokolade vorsichtig schmelzen.

Etwa 70 g des abgekühlten Zwetschgenkompotts zur geschmolzenen weißen Schokolade geben und gründlich verrühren, bis eine glatte, homogene Masse entsteht.

Nach Geschmack noch etwas Kardamom hinzufügen. Da Kardamom das Hauptaroma der Füllung sein soll, darf er hier ruhig deutlich wahrnehmbar sein.

Die Ganache abkühlen lassen, bis sie eine cremige, spritzfähige Konsistenz erreicht.

3. Macarons füllen

Die abgekühlte Zwetschgen-Kardamom-Ganache in einen Spritzbeutel füllen.

Auf die Hälfte der Macaron-Schalen die Ganache aufdressieren. In die Mitte jeweils eine kleine Menge des übrigen Zwetschgenkompotts spritzen.

Anschließend mit einer zweiten Macaron-Schale zusammensetzen und vorsichtig zusammendrücken, bis die Füllung den Rand erreicht.

Die fertigen Macarons anschließend in einem luftdichten Behälter im Kühlschrank lagern und idealerweise mindestens 24 Stunden reifen lassen.

Dadurch kann die Füllung in die Schalen einziehen und die Macarons bekommen ihre typisch zarte, leicht chewy Konsistenz.

Vor dem Servieren die Macarons etwa 15–30 Minuten auf Raumtemperatur kommen lassen.

Aufbewahrung

Im Kühlschrank luftdicht verpackt halten sich die gefüllten Macarons etwa 4–5 Tage.

Die Macarons können außerdem sehr gut eingefroren werden. Dazu luftdicht verpacken und zum Auftauen langsam im Kühlschrank temperieren.
