These Blueberry Cheesecake Buns are incredibly soft, moist and full of flavor. The rich, buttery yeast dough is layered with a fruity blueberry compote and a creamy cheesecake filling made with cream cheese and white chocolate.
The combination creates a beautiful balance of buttery sweetness, fruity acidity and creamy cheesecake flavor. The buns are finished with crunchy butter crumbles and a light lemon glaze.
Ingredients
Yeast Dough
● 400 g all-purpose flour
● 180 g milk
● 25 g fresh yeast or 8 g instant dry yeast
● 50 g sugar
● 1 egg
● 75 g butter, softened
● 6 g salt
● zest of 1 organic lemon
Cheesecake Filling
● 200 g cream cheese
● 100 g white chocolate
● a little vanilla
● zest of ½ organic lemon
Blueberry Compote
● 250 g frozen blueberries
● 30 g sugar
● 3 g lemon juice
● 2 g NH pectin
Makes approximately 200 g of finished compote.
Butter Streusel
● 75 g butter
● 75 g sugar
● 150 g all-purpose flour
● 1 pinch of salt
Lemon Glaze
● 100 g powdered sugar
● approx. 10–15 g lemon juice
● a little water, as needed

Method
1. Make the yeast dough
Dissolve the yeast in some of the lukewarm milk and let it sit for a few minutes.
Add the flour, sugar, egg, remaining milk, lemon zest and dissolved yeast to a mixing bowl and begin kneading. Make sure the salt does not come into direct contact with the yeast.
Knead until the dough starts to develop a gluten structure. Then gradually add the softened butter and knead until fully incorporated.
Continue kneading until the dough is smooth, elastic and no longer sticky. Because this is a rich yeast dough, it is important to knead it sufficiently long enough to develop a strong gluten structure.
Cover the dough and let it rise at room temperature for about 2 hours, or until noticeably increased in volume.
Alternatively, let the dough rise overnight in the refrigerator. This develops additional flavor and makes the dough easier to handle the following day.
2. Make the blueberry compote
Place the frozen blueberries and sugar in a small saucepan and heat gently. Lightly crush the berries while cooking, while keeping some pieces of fruit for texture.
Continue cooking until the mixture has reduced and become concentrated.
Mix the NH pectin with a little sugar and whisk it into the hot blueberry mixture. Bring it to a brief boil.
Add the lemon juice and reduce the mixture to approximately 200 g of finished compote.
Allow the compote to cool completely. It should be thick and spreadable rather than runny.
3. Make the cheesecake filling
Gently melt the white chocolate.
Mix it with the cream cheese until smooth, then add the vanilla and lemon zest.
The finished filling should be creamy but not runny.
4. Roll out and fill the dough
Roll the risen yeast dough out on a lightly floured surface into a rectangle approximately 1 cm thick.
The dough is now filled and folded similar to a simple pastry fold.
First, spread the cooled blueberry compote over two-thirds of the dough. Leave the remaining third completely unfilled – this section will later be covered with the cheesecake filling.
Now fold the blueberry-covered section in on itself. Take the outer third of the blueberry-covered dough and fold it over the middle third. This means that the blueberry filling is now layered on top of blueberry filling, turning the original two-thirds into one folded third with a double layer of blueberry filling.
Next, spread the cheesecake filling over the remaining unfilled third of the dough.
Finally, fold this last third over the already folded blueberry section.
This creates multiple layers of yeast dough, blueberry compote and cheesecake filling.
You should end up with following layers:
Dough -> cheesecake -> dough -> blueberry -> dough
For easier handling, place the folded dough in the freezer for about 15–30 minutes. This firms up the fillings and makes the dough much easier to cut cleanly.
5. Shape the buns
Cut the chilled dough into even strips.
Roll each stripe it into a spiral.
Place the finished buns onto a baking sheet lined with parchment paper, leaving some space between them.
Cover and allow them to proof again.
At room temperature, this will take approximately 2 hours. Alternatively, proof the buns in an oven at around 30°C / 86°F, where approximately 60 minutes should be enough.
The buns are ready when they have visibly expanded and approximately doubled in volume.
6. Make the butter streusel
Combine the butter, sugar, flour and salt and rub or knead together until coarse crumbs form.
Keep the streusel chilled until ready to use.
Once the buns have finished proofing, generously sprinkle them with the butter streusel.
7. Bake
Preheat the oven to 180°C / 355°F conventional heat.
Bake the buns for approximately 25–30 minutes, until beautifully golden brown and the streusel is crisp.
Baking time may vary slightly depending on the size of the buns.
8. Make the lemon glaze
Mix the powdered sugar with the lemon juice.
If the glaze is too thick, add a few drops of water until you reach a thick but pourable consistency.
Allow the baked buns to cool slightly, then drizzle them with the lemon glaze.
These Blueberry Cheesecake Streusel Buns are especially delicious while still slightly warm.
Blaubeer Cheesecake Streuselschnecken
Diese Blaubeer Cheesecake Streuselschnecken sind wunderbar saftig, buttrig und voller Geschmack. Der weiche Hefeteig wird mit einem fruchtigen Blaubeerkompott und einer cremigen Cheesecake-Füllung aus Frischkäse und weißer Schokolade geschichtet.
Durch die Kombination entsteht ein wunderschönes Zusammenspiel aus buttriger Süße, fruchtiger Säure und cremiger Cheesecake-Füllung. Getoppt werden die Schnecken mit knusprigen Butterstreuseln und einem feinen Zitronenzuckerguss.
Zutaten
Hefeteig
● 400 g Weizenmehl Type 550
● 180 g Milch
● 25 g frische Hefe oder 8 g Trockenhefe
● 50 g Zucker
● 1 Ei
● 75 g Butter, weich
● 6 g Salz
● Abrieb von 1 Bio-Zitrone
Cheesecake-Füllung
● 200 g Frischkäse
● 100 g weiße Schokolade
● etwas Vanille
● Abrieb von ½ Bio-Zitrone
Blaubeerkompott
● 250 g TK-Blaubeeren
● 30 g Zucker
● 3 g Zitronensaft
● 2 g Pektin NH
Ergibt ca. 200 g fertiges Kompott.
Butterstreusel
● 75 g Butter
● 75 g Zucker
● 150 g Weizenmehl
● 1 Prise Salz
Zitronenguss
● 100 g Puderzucker
● ca. 10–15 g Zitronensaft
● etwas Wasser nach Bedarf

Zubereitung
1. Hefeteig herstellen
Die Hefe in etwas von der lauwarmen Milch auflösen und einige Minuten stehen lassen.
Mehl, Zucker, Ei, restliche Milch, Zitronenabrieb und die aufgelöste Hefe in eine Rührschüssel geben und zu einem Teig verkneten. Dabei darauf achten, dass das Salz nicht direkt mit der Hefe in Kontakt kommt.
Den Teig zunächst kneten, bis sich langsam eine Glutenstruktur entwickelt. Anschließend die weiche Butter nach und nach hinzugeben und vollständig einarbeiten.
Den Teig nun so lange weiterkneten, bis er glatt, elastisch und nicht mehr klebrig ist. Bei diesem reichhaltigen Hefeteig ist es wichtig, ausreichend lange zu kneten, damit sich eine stabile Glutenstruktur entwickelt.
Den fertigen Teig abdecken und etwa 2 Stunden bei Raumtemperatur gehen lassen, bis er sich deutlich vergrößert hat.
Alternativ kann der Teig auch über Nacht im Kühlschrank gehen. Dadurch entwickelt er zusätzlich Aroma und lässt sich am nächsten Tag besonders gut verarbeiten.
2. Blaubeerkompott
Die TK-Blaubeeren zusammen mit dem Zucker in einen kleinen Topf geben und erhitzen. Die Beeren leicht zerdrücken, dabei aber etwas Fruchtstruktur erhalten.
Die Masse einkochen lassen, bis sie deutlich reduziert und konzentriert ist.
Das Pektin NH mit etwas Zucker vermischen und unter kräftigem Rühren in die heiße Blaubeermasse einarbeiten. Kurz sprudelnd aufkochen lassen.
Anschließend den Zitronensaft hinzufügen und die Masse auf etwa 200 g fertiges Kompott reduzieren.
Das Kompott vollständig abkühlen lassen. Es sollte am Ende dick und streichfähig sein und nicht vom Teig laufen.
3. Cheesecake-Füllung
Die weiße Schokolade vorsichtig schmelzen.
Mit dem Frischkäse glatt verrühren und anschließend Vanille und Zitronenabrieb hinzufügen.
Die fertige Masse sollte cremig, aber nicht flüssig sein.
4. Teig ausrollen und füllen
Den aufgegangenen Hefeteig auf einer leicht bemehlten Arbeitsfläche zu einem Rechteck von etwa 1 cm Dicke ausrollen.
Nun wird der Teig gefüllt und anschließend wie eine einfache Tour gefaltet.
Zuerst das abgekühlte Blaubeerkompott auf zwei Dritteln des Teigrechtecks verteilen. Das letzte Drittel bleibt vollständig frei – dieses wird später mit der Cheesecake-Füllung bestrichen.
Nun wird der mit Blaubeerkompott bestrichene Bereich innerhalb seiner zwei Drittel zusammengefaltet. Dafür das äußere Drittel des mit Blaubeerkompott bestrichenen Teiges über das mittlere Drittel klappen. Dadurch liegt nun Blaubeerfüllung auf Blaubeerfüllung, und aus den vorher zwei Dritteln wird ein gefaltetes Drittel mit einer doppelten Blaubeerschicht.
Jetzt die Cheesecake-Füllung auf das noch freie Drittel des Teiges streichen.
Dieses letzte Drittel anschließend über den bereits gefalteten Blaubeerteil klappen.
So entsteht eine mehrschichtige Füllung aus Hefeteig, Blaubeerkompott und Cheesecake-Füllung.
Ihr solltet folgende Schichtung erhalten:
Teig -> cheesecake Masse -> Teig -> Blaubeerkompott -> Teig
Für ein besonders sauberes Ergebnis den gefalteten Teig anschließend für etwa 15–30 Minuten in den Gefrierschrank legen. Dadurch werden die Füllungen wieder fester und der Teig lässt sich anschließend deutlich einfacher schneiden.
5. Schnecken formen
Den gekühlten Teig in gleichmäßige Streifen schneiden.
Jeden Streifen anschließend zu einer Schnecke aufrollen.
Die fertigen Schnecken mit etwas Abstand auf ein mit Backpapier belegtes Backblech setzen.
Abdecken und ein zweites Mal gehen lassen.
Bei Raumtemperatur dauert die zweite Gare ungefähr 2 Stunden. Alternativ können die Schnecken bei etwa 30 °C im Ofen gehen; dort reichen meist ungefähr 60 Minuten.
Die Schnecken sind bereit für den Ofen, wenn sie deutlich aufgegangen sind und sich ihr Volumen ungefähr verdoppelt hat.
6. Butterstreusel
Butter, Zucker, Mehl und Salz miteinander verkneten, bis grobe Streusel entstehen.
Die Streusel bis zur Verwendung kalt stellen.
Sobald die Schnecken vollständig aufgegangen sind, großzügig mit den Butterstreuseln bestreuen.
7. Backen
Den Backofen auf 180 °C Ober-/Unterhitze vorheizen.
Die Schnecken etwa 25–30 Minuten backen, bis sie schön goldbraun sind und die Streusel knusprig aussehen.
Je nach Größe der Schnecken kann die Backzeit etwas variieren.
8. Zitronenguss
Puderzucker mit dem Zitronensaft verrühren.
Falls der Guss zu dick ist, tropfenweise etwas Wasser hinzufügen, bis eine dickflüssige, aber gut verlaufende Konsistenz entsteht.
Die fertig gebackenen Schnecken etwas abkühlen lassen und anschließend mit dem Zitronenguss verzieren.
Am besten schmecken die Blueberry Cheesecake Streuselschnecken noch leicht warm.
