Pumpkin Cheesecake Donuts

Pumpkin shaped donuts dusted with powdered sugar

Hier geht es zum deutschen Rezept

These Pumpkin Cheesecake Donuts get their shape from a simple trick: before proofing, each dough ball is tied with cotton string. While frying, the dough puffs up between the strings and turns into a little pumpkin.

The yeast dough is soft and fluffy with a hint of orange zest. The filling is made with cream cheese, white chocolate and pumpkin puree, seasoned with warm spices.

Ingredients

Makes about 9 donuts.

Donut Dough

  • 133 g milk
  • 5 g dry yeast
  • 43 g sugar
  • 100 g whole egg
  • 350 g all-purpose flour (German type 550)
  • 7 g salt
  • 7 g skim milk powder
  • 47 g soft butter
  • zest of 1 orange

Pumpkin Cheesecake Filling

  • 50 g cream cheese
  • 50 g white chocolate
  • 30 g pumpkin puree
  • pumpkin spice to taste (or a mix of ginger, cinnamon, cardamom and nutmeg)

You also need

  • untreated cotton string
  • parchment paper
  • oil for frying and brushing
  • powdered sugar for dusting

Method

1. Activate the yeast

Warm the milk until it is lukewarm and stir in the dry yeast. Leave it for about 5 minutes. The yeast is ready when the mixture starts to foam and bubble slightly.

2. Make the dough

Put all remaining dough ingredients except the butter into the bowl of a stand mixer: sugar, egg, flour, salt, skim milk powder and orange zest. Add the yeast mixture.

Knead with the dough hook for 2 to 3 minutes until everything comes together. Start on a low speed and increase it once the flour is mixed in.

Add the soft butter and knead for another 3 to 5 minutes, switching between a lower and a higher speed. At first the dough is very soft and sticky. Don’t stop too early: it needs this time to develop gluten, the network that later holds the gas and makes the donuts fluffy. The dough is ready when it no longer sticks to the bowl or your fingers.

3. Rest in the fridge

Wrap the dough tightly in cling film and let it rise in the fridge for 24 hours.

4. Shape the dough balls

Take the dough out of the fridge and divide it into pieces of about 75 g.

Round each piece into a smooth ball. Shape your hand like a claw over the dough and move it in small circles on the work surface. This tightens the surface and makes the ball round. If the dough still sticks a little, rub a little oil on your hands.

5. Tie the pumpkins

Tie each ball right after shaping. Use untreated cotton string only. String that contains plastic will melt in the hot oil.

Cut 3 pieces of string per donut, about 25 to 30 cm long, so you can make a good knot. Lay them across each other so they divide the ball into segments, then tie them on top. Keep the string a little loose. The dough needs room to rise.

6. Proof

Cut a small square of parchment paper for each donut and brush it with a little oil. Place each tied ball on its own square and brush the top with a little oil as well, so the surface doesn’t dry out.

Cover the donuts. I lay a sheet of parchment paper on top and put everything in a bag. Let them proof in a warm place or in the oven at 30 °C / 86 °F. Depending on the temperature, this takes 1 to 4 hours. The donuts are ready when they look nicely puffed and full.

7. Fry

Heat the oil to 170 °C / 340 °F and keep it at this temperature. A thermometer helps a lot: if you fry in a pot, turn the heat up or down as needed. A fryer with a temperature setting makes it even easier.

Place the donuts in the oil together with their parchment square. Once the paper comes loose, take it out. Fry each side for at least 90 seconds, until the donut is golden brown. Let the donuts drain on a kitchen towel.

Let them cool completely, then cut and remove the strings. This way you won’t burn your fingers.

8. Make the filling

Melt the white chocolate. Stir the warm chocolate into the cream cheese together with the pumpkin puree until smooth. Season with pumpkin spice to taste.

9. Fill and finish

Fill the filling into a piping bag with a filling tip. Pipe it into each donut from the bottom, right in the center. Dust the donuts with powdered sugar and enjoy.

Zutaten

Ergibt etwa 9 Donuts.

Donutteig

  • 133 g Milch
  • 5 g Trockenhefe
  • 43 g Zucker
  • 100 g Vollei
  • 350 g Weizenmehl Type 550
  • 7 g Salz
  • 7 g Magermilchpulver
  • 47 g weiche Butter
  • Abrieb von 1 Orange

Kürbis Cheesecake Füllung

  • 50 g Frischkäse
  • 50 g weiße Schokolade
  • 30 g Kürbispüree
  • Pumpkin Spice Gewürzmischung nach Geschmack (oder eine Mischung aus Ingwer, Zimt, Kardamom und Muskatnuss)

Außerdem

  • unbehandeltes Baumwollgarn
  • Backpapier
  • Öl zum Frittieren und Bestreichen
  • Puderzucker zum Bestäuben

Zubereitung
