I love coconut, and this cake comes from my love for Raffaello. A soft, buttery sponge base is soaked in coconut milk, topped with a light coconut pudding cream and finished with a coconut ganache. Ganache is a smooth chocolate cream made by pouring hot liquid over chocolate. The cake needs to chill for at least 2 hours, so it is a good one to make ahead.

Ingredients

Sponge base (20 x 25 cm baking frame)

  • 150 g butter, soft
  • 150 g white sugar
  • 75 g cornstarch
  • 150 g whole eggs (about 3 eggs)
  • 75 g wheat flour
  • 7 g baking powder

Soaking

  • 150 g coconut milk (canned or from a carton)

Coconut pudding cream

  • 800 g coconut milk (canned or from a carton)
  • 90 g vanilla pudding powder
  • 80 g sugar
  • 1 pinch of salt
  • 300 g whipping cream, ideally coconut cream

Coconut ganache

  • 200 g coconut chocolate
  • 140 g coconut milk

Optional

  • toasted desiccated coconut for topping

Method

1. Make the sponge base

Heat the oven to 180 °C / 355 °F conventional heat. Place a 20 x 25 cm baking frame on a baking sheet lined with parchment paper. This is a classic pound cake batter: butter, sugar, eggs and flour/starch in equal parts by weight.

Beat the butter with the sugar and cornstarch until the mixture is light, creamy and almost white. This takes a few minutes. Add the eggs one at a time and mix each one in completely before adding the next, until the batter is smooth and even.

Add the flour and baking powder and fold them in briefly, only until no dry flour is left. Spread the batter into the frame and smooth the top. Bake for about 30 minutes.

2. Soak the base

Poke a few holes into the hot cake with a toothpick. Spoon the 150 g coconut milk over the cake while it is still hot, so it soaks in. Let the cake cool completely.

3. Cook the coconut pudding

Put 800 g coconut milk in a pot. Take out 150 g and stir it smooth with the pudding powder, the sugar and the salt. Bring the remaining coconut milk to a boil. Stir in the pudding mixture and keep stirring until the pudding is fully thickened.

Pour the pudding into a cold bowl and press cling film directly onto the surface so no skin forms. Let it cool completely.

4. Whip the cream and fold it in

Whip the 300 g cream. Coconut cream gives a stronger coconut flavor. If you can’t find it, regular whipping cream works too. Fold the whipped cream into the cold pudding with a spatula until the mixture is smooth and evenly combined.

5. Assemble

Spread the pudding cream on the cooled cake and smooth the top.

6. Make the ganache

Put the 200 g coconut chocolate in a bowl. Heat the 140 g coconut milk until hot and pour it over the chocolate. Stir until the chocolate has melted completely and the ganache is smooth. Spread it over the pudding cream.

7. Chill

Chill the cake in the fridge for at least 2 hours, until it is fully cold. If you like, top it with toasted desiccated coconut. Before serving, let the cake come to room temperature completely. Straight from the fridge, the butter in the sponge is hard and the base feels firm. At room temperature the sponge turns soft and juicy again.

Kokostraumkuchen
