Fluffy Chocolate Buns

A chocolate bun pulled apart by hand, showing the soft crumb and dark chocolate swirl inside.

Hier geht es zum deutschen Rezept

A baked, glossy chocolate bun on a wooden board with strips of dough and chocolate filling twisted around each other.

These chocolate buns are soft, fluffy and full of chocolate. The yeast dough rests in the fridge overnight, and every strip of dough is spread with a thick chocolate filling.

You wind three strips together like a ball of yarn. That is how the chocolate swirl ends up inside every bun. The recipe makes about 8 buns.

Ingredients

Dough

  • 450 g wheat flour (type 550)
  • 245 g water
  • 7 g dry yeast
  • 40 g oil
  • 10 g salt
  • 10 g honey or sugar beet syrup

Chocolate Filling

  • 160 g butter
  • 100 g brown sugar
  • 150 g chocolate, melted
  • 25 g cocoa powder
  • A little salt

Sugar Syrup (optional)

  • 75 g sugar
  • 75 g water

Method

1. Make the dough

Put all the dough ingredients into a bowl and knead them together. The dough is very soft and sticky at first.

Knead it for a long time, several minutes. Long kneading builds the gluten, the protein network that makes the dough elastic and the buns fluffy. The dough is ready when it no longer sticks to your fingers.

2. Chill the dough overnight

Cover the dough or wrap it in cling film, so it does not dry out. Chill it in the fridge for at least 12 hours, ideally overnight.

3. Roll out the dough

The next day, roll out the dough into a rectangle. It should be about 5 mm thick.

4. Make the filling

Stir the butter and the brown sugar together. Add the melted chocolate. It should not be too warm anymore, otherwise the butter melts. Then stir in the cocoa powder and a little salt.

Spread the filling over the rolled out dough.

5. Fold the dough

Fold the dough like a letter. Fold one side over the filling, so that one third of the dough stays free. Then fold this free third over the top.

6. Cut and wind the strips

Cut the dough into strips about as wide as a finger. Wind three strips together like a ball of yarn to form one bun.

7. Let the buns rise

Place the buns on a baking tray and spray them with a little water. Cover them and let them rise at room temperature for at least 2 and up to 4 hours. They should double in size.

8. Bake

Bake the buns at 180 °C / 355 °F conventional heat for about 30 minutes.

9. Brush with sugar syrup (optional)

Bring the sugar and the water to a boil briefly. Brush the buns with the syrup as soon as they come out of the oven, while they are still warm. This gives them a nice shine.

You can leave this step out if you like.

Zutaten

Teig

  • 450 g Weizenmehl Type 550
  • 245 g Wasser
  • 7 g Trockenhefe
  • 40 g Öl
  • 10 g Salz
  • 10 g Honig oder Zuckerrübensirup

Schokofüllung

  • 160 g Butter
  • 100 g brauner Zucker
  • 150 g Schokolade, geschmolzen
  • 25 g Kakaopulver
  • Etwas Salz

Läuterzucker (optional)

  • 75 g Zucker
  • 75 g Wasser

Zubereitung

1. Teig herstellen

Knete ihn lange, mehrere Minuten.
