Cinnamon Roll Cheesecake

Slice of cinnamon roll cheesecake with cinnamon rolls baked into the base and crème fraîche topping

Hier geht es zum deutschen Rezept

This cheesecake has cinnamon rolls baked right into it. The rolls form the base and the edge, and a creamy cheesecake filling sits on top. Every bite tastes like cheesecake and cinnamon roll at once.

A thick layer of crème fraîche topping adds the frosting every cinnamon roll needs. I used my pumpkin spice cinnamon rolls, but you can use any cinnamon rolls.

Ingredients

Cinnamon Rolls

  • About 5 baked cinnamon rolls, one day old

Cheesecake Filling

  • 450 g cream cheese
  • 100 g sugar
  • 1 pinch salt
  • 1 pinch vanilla (ground vanilla or extract)
  • Juice of 1/2 lemon
  • Zest of 1 lemon
  • 2 eggs
  • 1 egg yolk
  • 160 g crème fraîche

Topping

  • 180 g crème fraîche
  • 1 to 2 tbsp powdered sugar
  • 1 pinch vanilla

Method

1. Prepare the cake ring

Use a 20 cm cake ring. Wrap the bottom tightly in baking paper and then in aluminum foil, so the filling cannot leak out while baking.

Tip: A loaf tin works too. Nothing can leak out of it.

2. Line the ring with the cinnamon rolls

Unroll each cinnamon roll into a long strip. Lay the strips into the ring from the center outwards, so they cover the base. At the outer edge, leave the end of each strip rolled up in a small spiral. It stands against the ring and forms the edge.

Leave small gaps between the strips. The filling runs into them later, so you get cheesecake between the layers of the rolls.

Use rolls that were baked the day before. If they are older and dry, brush them with a sugar and cinnamon syrup first.

3. Make the cheesecake filling

Stir the cream cheese on its own first until it is completely smooth. Then add the sugar, salt, vanilla, lemon juice and lemon zest. Add the eggs and the egg yolk, then the crème fraîche. Stir everything until the filling is smooth and has no lumps. The temperature of the eggs does not matter.

Tip: If you only have vanilla sugar, use it and leave out a little of the sugar.

4. Fill the ring

Pour the filling over the cinnamon rolls. It should cover them completely. Small pieces of roll may still stick out. That is fine, you cut them off after baking.

5. Bake in a water bath

Put a tray with a little water on the bottom of the oven. Place the cheesecake on a rack or another tray above it. The steam keeps the cheesecake from drying out and cracking.

Bake at 170 °C / 340 °F conventional heat for 30 minutes to 1 hour. Mine took about 45 minutes. Check after 30 minutes. The cheesecake is done when the edge is firm and the center is still soft.

6. Cool and chill

Let the cheesecake cool at room temperature first. Then chill it for at least 6 hours, ideally overnight. If you cut it earlier, it is still too soft.

7. Add the topping

Cut off any pieces of roll that stick out of the filling. Stir the crème fraîche with the powdered sugar and vanilla until smooth, then spread it over the completely cooled cheesecake.

Tip: Crème fraîche is firmer or softer depending on the brand. If yours is runny, let it drain for a while in a fine sieve or in a kitchen towel. It loses some moisture and gets firmer. Mine did not need this.

Zimtschnecken-Cheesecake

Zutaten

Zimtschnecken

  • Etwa 5 gebackene Zimtschnecken vom Vortag

Cheesecake-Masse

  • 450 g Frischkäse
  • 100 g Zucker
  • 1 Prise Salz
  • 1 Prise Vanille (gemahlene Vanille oder Extrakt)
  • Saft von 1/2 Zitrone
  • Abrieb von 1 Zitrone
  • 2 Eier
  • 1 Eigelb
  • 160 g Crème fraîche

Topping

  • 180 g Crème fraîche
  • 1 bis 2 EL Puderzucker
  • 1 Prise Vanille

Zubereitung

1. Tortenring vorbereiten
